Ingredients for 4 persons:
- 1 Octopus, around 800 g
- 6 Bay leafs
- 1 large carrot, diced
- Coarsely ground white pepper
- 1 Tsp. Salt

- 1 Shallot, finely chopped
- 1 small stem of ginger, finely chopped
- 3 Cloves of Garlic, chopped
- Lemon peel, chopped
- Lemon juice
- Parsley, chopped
- Capers, diced
- Black pepper
- Salt
- Dash sugar
- Pins seeds, roasted
Preparation
- Clean octopus
- Get water boiling at high heat with bay leaf, carrots, pepper and salt
- Put octopus briefly into boiling water and remove
- Do this operation three times
- Reduce heat and cook the octopus at mild heat until soft (around 35 to 40 minutes)
- Remove from heat and let octopus cool down in the water
_________________________________________________ - Cut octopus in nice pieces and roast slightly in olive oil
- Blend all ingredients except pine seeds and add octopus
- Check seasoning, let marinate for half an hour
- Serve with roasted pine seeds
