Hans - Food For Thought No. 15


  • 130 ml milk
  • 30 g cream
  • 80 g white flour
  • 3 eggs
  • Salt
  • Parsley, chopped
  • Butter or ghee
  • 1.0 to 1.2 litre beef broth
  • Nutmeg
  • Chives in short rings


  1. Beat milk, flour, eggs, salt for a velvety running dough
  2. Add parsley
  3. Let dough rest for half an hour
  4. In a pan heat butter or ghee and fill in as much dough to cover the surface
  5. When one side is golden brown, turn around and fry the other side
  6. Put aside and repeat with remaining dough
  7. Roll up all flädle and cut 6 to 7 mm thick stripes
  8. Distribute all unrolled Flädle between soup plates and sprinkle chives over
  9. Heat beef broth up, check seasoning with nutmeg and salt
  10. Pour heated broth over and serve
