Ingredients for six persons:
4 whole eggs (bio)
4 egg yolks (bio)
3 quarters of semi-coarse soft wheat flour, 1 quarter of durum wheat flour, mixed together
1 tablespoon of olive oil
Form a ring of flour an a wooden board, put eggs, egg yolks, olive oil, salt in the middle and start making a dough, mixing with your fingers.
Add more flour mix and knead carefully until you reach a soft texture that does not stick any more to the surface.
Knead 10 minutes and wrap the dough in a cling film for resting.
After 30 minutes roll out the dough thinly by hand or with a pasta machine and cut it in 4 to 5 mm wide noodles.
Cook noodles in boiling salt water until they are “Al Dente” (around 4 to 5 minutes), drain and mix with Gorgonzola Sauce or Duck Sauce.
