Ingredients:
250 g Ricotta
250 g Spinach, blanched and well squeezed and chopped
60 g Parmigiano, finely grated
20 g Pine Nuts, roasted and chopped
1 Egg
1 Egg Yolk
80 g Double Cream
Salt
Nutmeg
White Pepper
Preparation:
Chop Spinach
Roast Pine Nuts until light brown and chop them
Blend all ingredients
Check seasoning
Prepare classical pasta dough and use a spoonful each of the filling for nice tasty raviolis
