Hans - Food For Thought No. 20

Cauliflower made in the usual way is a rather boring dish.
I am now presenting this vegetable in a different way, directly roasted in the oven  and spiced with turmeric and sweet paprika.

Ingredients:

  • 1 cauliflower head, cut into  nicely sized florets
  • Around 150 ml of olive oil
  • 2 small shallots, ultra-finely diced
  • 3 gloves of garlic, ultra-finely diced
  • 1 heaped teaspoon of ground turmeric
  • 1 heaped teaspoon of ground paprika
  • 2 heaped teaspoons of salt
  • 1½ heaped teaspoons of sugar

Preparation:

  1. Carefully grind and blend oil, shallots garlic, salt and sugar in a mortar for a marinade
  2. Add turmeric and paprika and blend
  3. Add the cauliflower florets and stir carefully to get the marinade well into the florets
  4. Cover and let it marinate for around 3 hours
  5. Stir occasionally
  6. Place the cauliflower florets close to each other in a tray and make sure the outer part of the florets is nicely visible
  7. Sprinkle remaining marinade over the florets
  8. Bake at 1750 for 15 minutes until the cauliflower is soft when you test it with a fork
  9. During baking use a spoon to pour marinade in the tray over the cauliflower
