Cauliflower made in the usual way is a rather boring dish.
I am now presenting this vegetable in a different way, directly roasted in the oven and spiced with turmeric and sweet paprika.
Ingredients:
- 1 cauliflower head, cut into nicely sized florets
- Around 150 ml of olive oil
- 2 small shallots, ultra-finely diced
- 3 gloves of garlic, ultra-finely diced
- 1 heaped teaspoon of ground turmeric
- 1 heaped teaspoon of ground paprika
- 2 heaped teaspoons of salt
- 1½ heaped teaspoons of sugar
Preparation:
- Carefully grind and blend oil, shallots garlic, salt and sugar in a mortar for a marinade
- Add turmeric and paprika and blend
- Add the cauliflower florets and stir carefully to get the marinade well into the florets
- Cover and let it marinate for around 3 hours
- Stir occasionally
- Place the cauliflower florets close to each other in a tray and make sure the outer part of the florets is nicely visible
- Sprinkle remaining marinade over the florets
- Bake at 1750 for 15 minutes until the cauliflower is soft when you test it with a fork
- During baking use a spoon to pour marinade in the tray over the cauliflower
